Abstract

Elma, Rosaceae familyasından kültüre alınan bir meyve türüdür. Elma ve elma suyu içerdikleri fenolik bileşikler, mineraller ve vitaminler sayesinde beslenmede önemli bir yere sahiptir. Ayrıca antioksidan özelliğe sahip olan elma ve elma suyu, oksidatif stresin neden olduğu birçok hastalığa karşı vücudumuzu korur. Elma suyunun içeriği genel olarak karbonhidrat, vitamin, mineral ve fenolik asitlerden oluşmaktadır. Elma suyunun içeriği elmanın türü, yetiştiği toprağın özellikleri, iklim gibi parametrelere bağlı olarak değişmektedir. Bu derlemede elma suyunun bileşimi hakkında bilgiler sunulmaktadır.
